Foodie Therapy: Pizza-Chicken Tray Bake

My mind says Victoria Secret model, but my heart says Nutella and pizza

It’s been 12 weeks since I began my weight loss journey and whilst I eat pretty well considering I am limiting my food intake, I am craving pizza. I don’t mean, “Yeah I would love a slice of that gorgeous melted cheese topped with ham, mushrooms and olives”. I am talking about face planting the damn thing! So before I undo all my hard work with just 8lbs more to go (I’m strong-willed and determined, nothing will make me cave goddamit), I have been looking for suitable alternatives that still give me that pizza taste and I have found it. I jest not! This is one mouth-watering winner.

INGREDIENTS (To serve 4)
  • 3-4 skinless chicken breasts
  • 250g passata
  • 2 tablespoons tomato puree
  • 3 teaspoons balsamic vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon fennel seeds
  • 1 thinly sliced red onion
  • 125g reduced fat mozzarella
  • 3 teaspoons sliced black olives
  • 7 leaves fresh basil
  • Salt and pepper to taste
INSTRUCTIONS

Preheat the oven to 200°C, fan 180°C, gas mark 6. Then combine the passata, tomato purée, vinegar, oregano, garlic powder and fennel seeds in a bowl, season and set aside.

Mist a frying pan with spray oil and cook the onion until soft then transfer to a roasting tin.

Butterfly the chicken breast fillets (slice horizontally almost to the other side and open like a book). Brush all over with spray oil. Heat a non-stick pan over a medium to high heat and sear the chicken for a minute on each side before transferring to a roasting tin.

Spoon the sauce over the chicken then scatter over the mozzarella and olives. Bake for 20 minutes until the cheese has melted, the sauce is bubbling and the chicken has cooked through.

Serve the chicken garnished with the fresh basil and serve with an accompaniment of your choice. I had a fresh green salad but sweet potato fries would be delish!

I can guarantee you will love this dish, I promise you it tastes just like pizza! It’s a no fuss, low-calorie easy prep dinner which is perfect for sharing and is only 3.5 points on Weight Watchers per serving.

Pizza face planting is no longer an issue!

    I have been looking for different ways to cook chicken and always have some sort of tomato paste based sauce in my kitchen, so this looks perfect. Thanks for sharing the recipe 😊

      Well for nachos check out my previous recipe and you can make your own which are ow fat just using plain tortillas! Thanks my lovely it’s been a journey but I’m getting there! Xxx
